Favorite Banana Muffins

2 tablespoons coconut oil, melted

1/2 cup local raw honey

1 egg

4 mashed really ripe bananas

3 tablespoons vanilla yogurt

1 teaspoon vanilla

1 cup whole wheat flour

1/2 cup quick-cooking oats

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

1/4 teaspoon kosher salt

1/2 cup toasted walnuts, chopped & toasted

Prep Time: 10 minutes


Whisk coconut oil and honey together until creamed. Add egg and whisk, then add in bananas, yogurt & vanilla.

In another bowl, stir together flour, oats, baking soda, baking powder, cinnamon, & salt.  Add to liquid and stir till just combined. Fold in toasted nuts.

Scoop into 12 muffin tins sprayed with nonstick cooking spray. (or can make as a bread in bread loaf).

Bake at 350 degrees F for 20 minutes, until cooked through. These freeze perfectly!  Just pop out of the freezer and thaw or microwave for a breakfast or snack on the run. Happy Baking!
