Avocado & Papaya Quinoa with Spicy Lime Sauce

So nourishing! Papaya is filled with a nutrient called papain, that lowers inflammation (just like pineapple), and helps healing. It’s so abundant in vitamin C and folate, which magnify it’s ability to help people with inflammation, such as arthritis and asthma. It has a luscious tropical taste & goes well with the creaminess of avocado! This delicious bowl tastes like the tropics with a kick of spicy.

Ingredients

2 cups cooked quinoa
1 cup cooked chicken, diced
1 avocado, diced
1 papaya, seeded and sliced into thin strips
2 cups fresh baby spinach, coarsely chopped
1 cup greek plain yogurt
zest and juice from 1 lime
1/4 teaspoon kosher salt
1/8 teaspoon cayenne pepper (or more to taste)

Preparation

1. Combine quinoa with chicken, avocado, papaya and baby spinach.  Set aside.
2. In a medium mixing bowl, whisk together the greek yogurt, lime juice and zest, kosher salt and cayenne pepper until well combined.
3. Place quinoa salad in serving bowls and top with yogurt dressing.

Servings: 4 bowls
