Pumpkin Spice Power Bowl

Every fall, I get the urge to use pumpkin in every way I can think of. Typically we only think to use it in baked items, where it has to be cooked, but pure pumpkin does not need to be cooked! Use it in smoothies, parfaits, on oats, etc.

Thick, creamy vanilla Greek yogurt, such as Oikos Triple Zero – which I love because it is sweetened with stevia, the herb that is sweet. Then stir in some pure pumpkin.

Add some toasted walnuts…high in plant-based Omega-3s, the healthy fat used in your brain, heart and eyes, and they are so rich in flavor too. A sprinkle of pumpkin spice or cinnamon, and if needed, a drop of pure maple syrup…

So delicious! …and great with a morning hot cup of chai tea.

Ingredients

1/2 cup vanilla Greek yogurt
2 tablespoons pure pumpkin (such as Libby’s or your own homemade)
2 teaspoons toasted walnuts
dash pumpkin pie spice or ground cinnamon

Preparation

1. Swirl pumpkin into yogurt. Top with toasted walnuts – if you are not a fan of walnuts, use pumpkin seeds or almond. All are delicious!
2. Add pumpkin pie spice or cinnamon and if needed, just a drop of pure maple syrup. Enjoy a yummy fall breakfast!
