My entire family is night owls. When we are altogether, we are often up until 2 a.m. Even though I never recommend eating at night, if you are that much of a night owl, you need to fuel that metabolism…with something healthy! This is one of my favorite toasts- consider it an “early early early” breakfast.

Ingredients
1 slice sprouted grain bread
1 tablespoon cashew butter or almond butter
1/4 banana, sliced on the diagonal
2 tablespoons fresh blueberries
1 teaspoon granola
2 teaspoons maple syrup
1 teaspoon additional cashew/almond butter

Prep Time: 10 minutes
Preparation
Toast bread lightly. While it’s hot, smear cashew or almond butter all over toast. Place on banana slices, dot with fresh blueberries, and sprinkle granola.
Melt maple syrup and 1 teaspoon cashew/almond butter in microwave for 10 seconds. Stir together, and drizzle over toast. So good! Enjoy!
