A hearty breakfast bowl that is so delicious and filling! Simple, because the it’s all made in one pan, and eaten in one comforting bowl. If you have trouble being hungry right after breakfast, this will do the trick. Anytime I have made a batch of yummy crockpot black beans, this is breakfast several times that week. Getting in extra fiber for breakfast will help stave off any afternoon cravings…
Ingredients
1/3 cup black beans, rinsed & drained
2 eggs
small handful power greens mix
1 small green onion, ends removed & chopped
2 tablespoons freshly scooped avocado
1 tablespoon crumbled feta
Preparation
1. In a small skillet on medium heat, add black beans and heat for a minute just until warmed. Pour beans into a bowl.
2. Spray skillet with nonstick cooking spray, and add eggs to scramble. Sprinkle in a pinch of sea salt. Just before eggs are almost done, add power greens and chopped green onion. This will give the power greens time to wilt a bit, and let the onion flavor everything. Once eggs are done, add them to the bowl.
3. Put small scoops of avocado over the top and sprinkle on feta. Eat immediately!
