Give up fried food, and you will feel better.
That means for many of us, letting go of…fries. Or as one of my friends said, she has “freedom” from fries (that was her way of positioning it positively – lol). Like so many foods, cooking them at home can give a taste that’s even better, making letting go of the food that was holding us back easy. Make homemade baked fries – at least once- and see if you like them. Chances are (I think and I hope!) that you like them BETTER.
When you roast fries instead of bake them, you *might* notice a couple of things:
– your digestion isn’t bothered (sometimes eating deep fried foods in processed oils can mess with people’s digestion)
– the flavor comes through better
– a waxy film isn’t left in your mouth (this is a good thing!)
I have been able to convince everyone who has tried these to make them regularly – they make an excellent side, especially for summer or fall grilling. I am so sorry that I don’t have better pictures for you yet, but I did a video on this recipe, in case you’d like to see it made up close!

Ingredients
2 sweet potatoes, washed (leave the skin on!)
butter-flavored cooking spray
1/2 – 1 teaspoon kosher salt
1 teaspoon fresh thyme
1/2 teaspoon fresh grated garlic or garlic powder
1 tablespoon grated Parmesan cheese
1 teaspoon fresh thyme
Preparation
1. Preheat oven 425 degrees F.
Line a baking sheet with parchment paper, or use a silicone baking mat (this will make for super-easy clean up!) Spray surface with non-stick cooking spray (or use a couple teaspoons olive oil or coconut oil).
2. Cut potatoes into ΒΌ inch thick sticks (first cut into sheets, then sticks!) Lay them out on the baking sheet so they are in a single layer. Spray them liberally with cooking spray, then sprinkle with salt and garlic. Toss them around and make sure they are in a single layer.
3. Bake for 20 minutes, rotate the fries, and bake 20-25 minutes more, until fries are light brown and toasty. Remove fries and sprinkle on the Parmesan cheese and fresh thyme. Serve immediately.
These fries are really delicious and quench that desire for a tasty addition to Annessa’s Black Bean burger! I could not stop munching on them?
