Thyme Roasted Butternut Squash

Ingredients

small butternut squash
2 cloves garlic
3 sprigs of fresh thyme
2 teaspoons olive oil

Prep Time: 5 minutes

Preparation

Preheat oven to 400 degrees F.

Peel squash and cut into 1/2 inch cubes. Using a handheld grater, grate garlic over the squash and toss onto a baking sheet with olive oil, sea salt, and fresh thyme leaves. Arrange squash in a single layer.

Bake for 20 minutes, until squash is browned, and fork-tender. Serve as a delicious side dish!
