This is one of my favorites to bring to a summer party. It’s so fresh, and so simple. By the way, look for a balsamic glaze that has no added sugar. It should just consist of the balsamic vinegar that has been heated and concentrated. In fact, you could even make your own!
2/3 cup roasted tomatoes (see Roasted Tomato Recipe)
16 ounces sliced fresh buffalo mozzarella cheese
16-20 fresh basil leaves
1 tablespoon balsamic glaze, such as Modenaceti
1/2 teaspoon kosher salt
black pepper to taste
Prep Time: 15 minutes
In a mixing bowl, combine tomatoes, cheese, basil leaves, salt and pepper.
Drizzle with balsamic glaze and toss. Serve.
