Did you know that zucchinis are excellent to use in green smoothies? If you chop them up and freeze them prior to blending it in a smoothie, they give a creamy mellow consistency. It’s thick and delicious! Zucchinis are great for diabetics, because in addition to their fiber, they have a special plant-chemical (called homogalacturoran…but who needs to know that!) that helps keep insulin metabolism and blood sugar in balance. It’s rare that we get the full benefit of zucchinis by eating them raw…but putting them into a smoothie bowl will let us absorb everything it has to offer. How awesome!
This smoothie bowl is sweet, creamy, low in calories, high in fiber, and sooooo refreshing. If you wanted to turn it into a “meal”, adding a scoop of vanilla protein powder would be the way to do it! Of course you could simply make this into a straight-up smoothie…or pour it into a bowl and sprinkle on whatever toppings makes you happy.

Ingredients
1 cup diced frozen zucchini
1 cup freshly diced pineapple
1 ripe frozen banana
1 cup loosely packed spinach
1 cup unsweetened coconut milk
toppings: any you like! My suggestions are:
crushed raw pepitas (pumpkin seeds)
sliced mint
hemp seeds
lemon zest
kiwi slices
coconut flakes
matcha powder (green tea powder)
Preparation
1. In a blender, add all smoothie ingredients, blending on high until completely smooth. There may still be specs of green in this smoothie, and that is a good thing!
2. Pour smoothie into two bowls, and sprinkle on any toppings you enjoy.
