5-Ingredient Power Cookies

What’s your go-to snack for travel? This segment is one of my favorites, because long ago, as a momma of teeny ones, I learned that the snacks along the way make or break the trip. Sounds like I’m exaggerating, but seriously – we either arrive at our destination feeling energized and in a good mood, OR cranky, hangry, and in a bad mood from all of the sugar and sluggish from junk food. I think even more for kids – snack affect their mood.

So I took my favorite newest 5-ingredient creation to Channel 5 KDSK’s Show Me St Louis…and it was a blast!  In here find the best muesli I use to make these easy travel-friendly chocolate chip power cookies – Seven Sundays Muesli.  Learn about it and travel snack trips by watching!

5-Ingredient Power Cookies 

2 really ripe bananas

3/4 cup unsweetened peanut butter

2 cups blueberry buckwheat chia muesli

1 teaspoon vanilla extract

3/4 cup dark chocolate chips

  1. Preheat oven to 350º. In a medium bowl, mash bananas with the back of a fork until mixture is pureed.
  2. Add peanut butter, stirring mixture together until smooth. Add vanilla extract and muesli, mixing until well incorporated. Fold in dark chocolate chips.
  3. Scoop mixture into 2 tablespoon rounds onto a baking sheet lined with parchment paper. Press each down a little to shape. Bake for 10 minutes, until cookies look done, but chocolate chips are still gooey.
  4. Remove and let cookies set 5 minutes. Dive in!
