Toasted Coconut & Almond Homemade Granola

Ingredients

2 cups whole rolled oats (not quick-cooking)

1 cup almond pieces

½ cup toasted wheat germ

½ cup non-fat dry milk

1/3 cup sunflower seeds

3 Tablespoons ground flaxseed

½ cup pure maple syrup

3 Tablespoons milk, regular, almond or coconut

½ cup turbinado sugar or sucanat

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 teaspoon almond extract

1 cup shredded coconut

1/2 teaspoon kosher salt

Prep Time: 10 minutes

Preparation

Heat oven to 275 degrees F.

In a medium-sized bowl, combine first 6 ingredients. Set aside. In a small bowl, whisk maple syrup, milk, sugar, cinnamon, extracts and salt.

Pour wet mixture over oat mixture, stir to coat.

Spread granola evenly onto a large baking sheet coated with non-stick cooking spray.  Bake for about 1 hour, stirring every 15 minutes. Stir coconut into the mixture during the last 15 minutes. (Hint: if you like crispy granola, bake for longer, for chewy granola, bake for a shorter time).

Remove and store in an airtight container.
