Glo-Getter Detox Fruit Salad

Believe it or not….people are happy to have something fresh and healthy on the New Year’s Eve spread after a past month of being surrounded by heavier foods. I have the perfect dish to add to the spread:

The great thing about it is that it’s so simple….but there is something magical about these 3 seasonal fruits coming together. Trust me, this will get rave reviews. Plus, these quick side has a magnificent nutrition profile: pineapple has anti-inflammatory benefits, kiwi’s nutrients protect DNA, and pomegranate is amazing for blood health. And, it’s so gorgeous…I find myself taking this to every winter gathering and I always leave with an empty bowl!

I like this Detox Fruit Salad at room temperature, but other people may prefer it cold. Either way, store it covered in the refrigerator until you’re ready to serve it. The great thing is that none of these fruits will change color nor oxidize in the waiting process!

Ingredients

3 cups fresh pineapple chunks (from a ripe, sweet pineapple)
3 ripe kiwis, peeled and roughly chopped into large chunks
1/2 cup pomegranate seeds

Preparation

1. In a serving bowl, fold together pineapple and kiwi. Sprinkle pomegranate arils on top (they will get mixed into the salad on their own!)
2. EAT! ….and feel the health benefits along with the amazing taste.
