Coffee Smoothie Bowl

This one is for the coffee people! I like to say that with enough coffee, we could solve the world’s problems. Well, not really, but when used right it can help you be more “present” in your day. Coffee has many other health benefits too! So, this particular smoothie bowl could be breakfast…or any meal. With 37 grams of protein, it’s got not only a boost from the espresso powder, but from the protein powder as well. I would say it’s not for kids (at least, my kids in no way need caffeine), but rather for hardworking mommas who need a boost and the mood-elevating health benefits of dark chocolate!

Ingredients

1/3 cup unsweetened coconut milk (from a carton, not a can)
2 teaspoons espresso powder
6 ounces vanilla Greek yogurt
1 tablespoon almond butter
1 scoop vanilla protein powder
1 date, chopped

toppings:
1 teaspoon shaved dark chocolate
1 teaspoon shaved coconut flakes
1 teaspoon dry roasted almonds
1/2 teaspoon chia seeds

Preparation

1. In a blender, add all smoothie ingredients. Blend until smooth. Add a handful of ice and pulse.
2. Pour mixture into a bowl and top with shaved dark chocolate, coconut flakes, almond and chia seeds.

Notes:
– this smoothie bowl is more toward the thinner side than thicker – it is meant to be refreshing and light! If you would like it to have a thicker consistency, add half of a frozen banana
– put a chocolate + coffee spin on this smoothie bowl by adding 2 teaspoons of unsweetened cocoa powder or cacao powder.
